  • 4 slices sourdough or ciabatta bread
  • 2 cups fresh spinach leaves
  • 1 large tomato sliced
  • 4 slices mozzarella provolone, or Swiss cheese
  • 2 tablespoons pesto or mayonnaise optional
  • 1 tablespoon olive oil or softened butter
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Preheat a panini press or grill pan over medium heat.
  2. Spread pesto or mayonnaise on one side of each bread slice, if using.
  3. Layer two slices of bread with cheese.
  4. Add the sliced tomatoes evenly over the cheese.
  5. Top with the fresh spinach leaves.
  6. Sprinkle with Italian seasoning, salt, and black pepper.
  7. Add another layer of cheese and top with the remaining bread slices.
  8. Brush the outside of the bread with olive oil or butter.
  9. Grill in the panini press for 5-7 minutes until the bread is golden and the cheese has melted.
  10. Slice in half and serve immediately while warm.
