Cooking Instructions
 

  1. Preheat oven to 375°F (190°C).
  2. Brush eggplant, potatoes, and zucchini lightly with olive oil.
  3. Roast vegetables for 20 minutes until slightly tender.
  4. Heat olive oil in a pan over medium heat.
  5. Add onion and garlic and cook until soft.
