Vegetable Quinoa

Vegetable quinoa combines fluffy quinoa with sautéed onion and chopped vegetables. The quinoa cooks separately while the vegetables soften in olive oil, then everything is gently tossed together. Optional parsley or cilantro and lemon juice add a fresh finish.

This recipe makes four side portions. Choose a vegetable mixture that cooks evenly: finely diced carrots need more attention than softer vegetables such as zucchini or peas. Cook the vegetables while the quinoa simmers to keep preparation efficient, and check both for tenderness before combining. Serve warm alongside beans, tofu, or your main dish.

Notes

• Rinse and drain the quinoa before cooking. Use the package directions as a guide for liquid quantity and cooking time.
• Cook the vegetables while the quinoa simmers rather than completing the two stages separately.
• The mixed-vegetable quantity is one cup altogether. Cut firmer vegetables, such as carrots, into smaller pieces than softer vegetables.
• Check the vegetables for tenderness before combining them with the quinoa; different mixtures may need different cooking times.
• Fluff the cooked quinoa with a fork, then combine gently to avoid crushing the vegetables.
• Taste before adding salt when cooking the quinoa in vegetable broth. Optional toppings and extra oil change the nutrition.
