- Add quinoa and water or broth to a pot.
- Bring to a boil, then reduce heat.
- Cover and simmer 15 minutes, until liquid is absorbed.
- Fluff with a fork.
- Cook the Vegetables
- Heat olive oil in a pan over medium heat.
- Add onion and cook 4-5 minutes until soft.
- Add vegetables and cook 5-7 minutes, until tender but still bright.
- Add cooked quinoa to the vegetables.
- Season with salt and pepper and toss gently.
- Finish with herbs, lemon juice, or olive oil if desired.
- Serve warm or at room temperature.
