  • 1 cup all-purpose flour
  • 1/4 cup grated Parmesan or crumbled feta cheese
  • 2 green onions finely sliced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 clove garlic minced
  • 1 teaspoon baking powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil plus more for frying
  • For the Yogurt Dip
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 small garlic clove minced
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. In a bowl, combine the diced tomatoes, green onions, parsley, dill, garlic, and cheese.
  2. Add the flour, baking powder, paprika, salt, black pepper, and olive oil. Stir until a thick batter forms.
  3. In a separate bowl, whisk together the Greek yogurt, lemon juice, dill, garlic, salt, and black pepper. Refrigerate until ready to serve.
  4. Heat a thin layer of olive oil in a large skillet over medium heat.
  5. Scoop about 2 tablespoons of batter into the skillet for each fritter and gently flatten with a spoon.
  6. Cook for 3-4 minutes until golden brown.
  7. Flip carefully and cook the other side for another 3-4 minutes.
  8. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  9. Arrange the fritters on a serving platter.
