Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • ¼ cup breadcrumbs or oat flour
  • 1 egg or flax egg for vegan
  • 2 tbsp chopped parsley or green onion
  • ½ tsp ground cumin or paprika
  • Salt to taste
  • Black pepper to taste
  • Avocado Sauce
  • 1 ripe avocado
  • 2 tbsp lemon or lime juice
  • 1 clove garlic
  • 2-3 tbsp water
  • Salt to taste

Cooking Instructions
 

  1. Boil sweet potatoes until tender, 12-15 minutes. Drain and mash.
  2. Stir in breadcrumbs, egg, herbs, spices, salt, and pepper.
  3. Form mixture into small patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook patties for 3-4 minutes per side, until golden.
  6. Blend all avocado sauce ingredients until smooth.
  7. Serve patties warm with avocado sauce spooned on top or on the side.
