Cooking Instructions
 

  1. Preheat oven to 425°F (220°C).
  2. Place whole red peppers on a baking sheet.
  3. Roast for 20-25 minutes until skins are charred.
  4. Remove, cool, peel, and remove seeds.
  5. Heat olive oil in a pot over medium heat.
  6. Add onion and cook until soft.
  7. Add garlic and cook for 1 minute.
  8. Add roasted peppers and vegetable broth.
  9. Simmer for 10 minutes, then blend until smooth.
  10. Serve topped with sliced green onions.
