Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk diced (optional)
  • 4 cups vegetable broth
  • 1 bunch kale stems removed and chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp lemon juice optional

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in carrot and celery; cook for 3-4 minutes.
  5. Add vegetable broth and bring to a gentle boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Add kale and cook for 5-7 minutes, until tender.
  8. Season with salt, pepper, and lemon juice if using.
  9. Serve warm.
