  • 12 oz chow mein noodles or egg noodles
  • 2 tbsp oil neutral or sesame
  • 8 oz mushrooms sliced
  • 1 bell pepper thinly sliced
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp oyster sauce or vegetarian stir-fry sauce
  • 1 tsp rice vinegar or lime juice
  • Black pepper to taste

Cooking Instructions
 

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat oil in a wok or large skillet over medium-high heat.
  3. Add mushrooms and stir-fry for 3-4 minutes until lightly browned.
  4. Add bell pepper and cook for 2 minutes until just tender.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Add noodles, soy sauce, oyster sauce, and vinegar. Toss well to coat.
  7. Fold in spinach and cook just until wilted.
  8. Season with black pepper and serve hot.
