- Cook noodles according to package instructions. Drain and set aside.
- Heat oil in a wok or large skillet over medium-high heat.
- Add mushrooms and stir-fry for 3-4 minutes until lightly browned.
- Add bell pepper and cook for 2 minutes until just tender.
- Add garlic and cook for 30 seconds until fragrant.
- Add noodles, soy sauce, oyster sauce, and vinegar. Toss well to coat.
- Fold in spinach and cook just until wilted.
- Season with black pepper and serve hot.
