  • 2 cups cooked chickpeas or 1 can, drained and rinsed
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh parsley or cilantro chopped
  • Dressing
  • 2 tbsp olive oil
  • tbsp lemon juice or red wine vinegar
  • ½ tsp ground cumin optional
  • Salt to taste
  • Black pepper to taste

Cooking Instructions
 

  1. Add chickpeas, tomatoes, cucumber, red onion, and herbs to a large bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
