Cooking Instructions
 

  1. Cook soba noodles according to package instructions.
  2. Drain and rinse thoroughly under cold water.
  3. Place noodles in a large mixing bowl.
  4. In a small bowl, whisk together gochujang, soy sauce, rice vinegar, sesame oil, and maple syrup.
  5. Pour the sauce over the cold noodles.
  6. Toss until evenly coated, Taste and add salt only if needed
  7. Divide noodles among serving bowls.
  8. Top with julienned cucumber and seaweed strips.
  9. Sprinkle with sesame seeds and sliced green onions.
  10. Serve immediately while the noodles are cold, adding the seaweed just before serving
