  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a loaf pan.
  3. Mix Wet Ingredients
  4. In a bowl, mash bananas.
  5. Stir in oil, sugar, egg, and vanilla until combined.
  6. Add Dry Ingredients
  7. Sprinkle baking soda and salt over the mixture.
  8. Gently fold in flour (and cinnamon if using).
  9. Pour batter into prepared pan.
  10. Bake 50- 55 minutes, until a toothpick comes out clean.
  11. Let cool 10- 15 minutes before slicing.
