- Preheat oven to 350°F (175°C).
- Lightly grease a loaf pan.
- Mix Wet Ingredients
- In a bowl, mash bananas.
- Stir in oil, sugar, egg, and vanilla until combined.
- Add Dry Ingredients
- Sprinkle baking soda and salt over the mixture.
- Gently fold in flour (and cinnamon if using).
- Pour batter into prepared pan.
- Bake 50- 55 minutes, until a toothpick comes out clean.
- Let cool 10- 15 minutes before slicing.
