Ingredients
  

  • 4 large flour tortillas
  • 2 cups cooked pinto or black beans or canned, drained and rinsed
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • Salt to taste
  • Black pepper to taste
  • Optional Fillings
  • Cooked rice
  • Shredded cheese or vegan cheese
  • Lettuce shredded
  • Diced tomatoes or salsa
  • Avocado or guacamole

Cooking Instructions
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add beans, cumin, chili powder, salt, and pepper.
  3. Cook for 5-7 minutes, gently mashing some beans for texture.
  4. Warm tortillas in a dry skillet or microwave.
  5. Spoon bean mixture onto tortillas.
  6. Add desired fillings.
  7. Roll into burritos, folding in sides tightly.
  8. Serve warm.
