Cooking Instructions
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and cook for 30 seconds.
  3. Cook the diced tomatoes for 3-4 minutes, until softened.
  4. Add the corn and cook for about 2 minutes, or until heated through and tender. Allow additional time if needed for fresh or frozen kernels
  5. Season with salt and black pepper.
  6. Create four small spaces in the vegetable mixture.
  7. Crack an egg into each space.
  8. Cover the skillet and cook gently until the whites and yolks are firm, reducing the heat if the vegetables begin to catch
  9. Remove from heat.
  10. Garnish with fresh parsley and serve warm.
