Ingredients
  

  • 12 oz green noodles spinach noodles or vegetable noodles
  • 1 cup cherry tomatoes halved
  • 1/4 cup almonds chopped
  • 1/4 cup cashews chopped
  • 1/4 cup peanuts chopped
  • 1/3 cup crispy fried onions
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped

Cooking Instructions
 

  1. Cook green noodles according to package directions.
  2. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add garlic and cook for 1 minute.
  5. Stir in almonds, cashews, and peanuts.
  6. Cook for 2-3 minutes until lightly toasted.
  7. Add cherry tomatoes and cook for 2 minutes.
  8. Toss in the cooked noodles and season with salt and black pepper.
  9. Transfer to serving bowls.
  10. Top with crispy fried onions and fresh parsley before serving.
