Ingredients
  

  • 1 large head cauliflower leaves trimmed
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika or smoked paprika
  • ½ tsp garlic powder
  • 4 oz goat cheese softened
  • 2-3 tbsp plain yogurt or cream
  • 1 tsp lemon juice
  • Salt to taste

Cooking Instructions
 

  1. Preheat oven to 400°F (205°C). Line a baking dish or sheet with parchment paper.
  2. Bring a large pot of salted water to a boil. Carefully lower cauliflower in and blanch for 5 minutes. Drain well and pat dry.
  3. Place cauliflower in the prepared baking dish.
  4. Drizzle with olive oil and season with salt, pepper, paprika, and garlic powder.
  5. Roast uncovered for 40-45 minutes, basting once halfway, until deeply golden and tender.
  6. While cauliflower roasts, mix goat cheese, yogurt or cream, lemon juice, and a pinch of salt until smooth.
  7. Remove cauliflower from oven and let rest for 5 minutes.
  8. Spoon or drizzle creamy goat cheese over the top or serve on the side. Slice and serve warm.
