  • 1 small onion finely chopped
  • 2 cups fresh spinach chopped (or frozen, thawed and well-drained)
  • 4 large eggs
  • 1 cup milk or cream
  • 1 cup shredded cheese Swiss, cheddar, or mozzarella
  • ¼ cup grated Parmesan
  • ½ tsp dried thyme or mixed herbs
  • Salt to taste
  • Black pepper to taste
  • 1 prepared pie crust

Cooking Instructions
 

  1. Preheat oven to 375°F (190°C). Place pie crust in a pie dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and sauté for 4-5 minutes until soft.
  4. Add spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a bowl, whisk eggs, milk, salt, pepper, and herbs.
  6. Spread spinach mixture evenly over the pie crust.
  7. Sprinkle shredded cheese and Parmesan on top.
  8. Pour egg mixture over filling.
  9. Bake for 35-40 minutes, until center is set and top is lightly golden.
  10. Let rest 10 minutes before slicing.
