  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp grated fresh ginger
  • tsp ground cumin
  • 1 tsp paprika or chili powder
  • ½ tsp ground turmeric
  • 4 medium potatoes peeled and diced
  • 1 can 14–15 oz diced tomatoes
  • 3 cups vegetable broth
  • 1 cup green peas fresh or frozen
  • Salt to taste
  • Black pepper to taste
  • ¼ tsp chili flakes optional, for extra heat
  • Fresh cilantro chopped (optional)

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and ginger; cook for 30 seconds until fragrant.
  4. Stir in cumin, paprika or chili powder, and turmeric. Toast briefly.
  5. Add potatoes, diced tomatoes, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 25 minutes, until potatoes are tender.
  7. Stir in peas and cook for 5 minutes.
  8. Season with salt, pepper, and chili flakes if using.
  9. Garnish with fresh cilantro and serve hot
