- Heat olive oil in a pot over medium heat.
- Add onion and cook for 4-5 minutes until soft.
- Add garlic and ginger; cook for 30 seconds until fragrant.
- Stir in cumin, paprika or chili powder, and turmeric. Toast briefly.
- Add potatoes, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25 minutes, until potatoes are tender.
- Stir in peas and cook for 5 minutes.
- Season with salt, pepper, and chili flakes if using.
- Garnish with fresh cilantro and serve hot
