Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in garlic and mushrooms and cook for 3 minutes.
  4. Add quinoa, vegetable broth, salt, and black pepper.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for 15 minutes until quinoa is tender and liquid is absorbed.
