  • 2 tbsp vegetable oil or olive oil
  • 1 cup long-grain white rice rinsed and drained
  • ¼ cup onion finely chopped
  • 1 clove garlic minced
  • 1 cup tomato sauce or crushed tomatoes
  • 2 cups vegetable broth or water
  • ½ tsp ground cumin
  • ½ tsp chili powder optional
  • Salt to taste

Cooking Instructions
 

  1. Heat oil in a saucepan over medium heat.
  2. Add rice and cook, stirring often, for 3-4 minutes until lightly golden.
  3. Add onion and cook for 2 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in tomato sauce, broth, cumin, chili powder (if using), and salt.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 18-20 minutes, until liquid is absorbed.
  8. Remove from heat and let rest for 5 minutes.
  9. Fluff with a fork and serve warm.
