Ingredients
  

  • 2 large sweet potatoes peeled and cubed
  • 2 tbsp butter or olive oil
  • ¼ cup milk or plant-based milk
  • 1 tsp fresh rosemary finely chopped
  • Black pepper to taste
  • Salt to taste

  1. Bring a pot of salted water to a boil.
  2. Add sweet potatoes and cook for 18-20 minutes, until very tender. Drain well.
  3. Return sweet potatoes to the pot.
  4. Add butter (or olive oil) and milk.
  5. Mash until smooth and creamy.
  6. Garnished with rosemary, salt, and black pepper.
  7. Taste and adjust seasoning. Serve warm.
