- Bring a pot of salted water to a boil.
- Add sweet potatoes and cook for 18-20 minutes, until very tender. Drain well.
- Return sweet potatoes to the pot.
- Add butter (or olive oil) and milk.
- Mash until smooth and creamy.
- Garnished with rosemary, salt, and black pepper.
- Taste and adjust seasoning. Serve warm.
