Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp curry powder or paste to taste
  • 3 medium potatoes peeled and diced
  • 3 cups vegetable broth
  • 1 cup coconut milk or cream
  • Salt to taste
  • Black pepper to taste
  • ¼ cup fresh cilantro chopped

Cooking Instructions
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in curry powder or paste and cook briefly to bloom spices.
  5. Add potatoes and vegetable broth.
  6. Bring to a gentle boil, then reduce heat and simmer for 25 minutes, until potatoes are tender.
  7. Stir in coconut milk or cream and season with salt and pepper.
  8. Warm gently, then finish with fresh cilantro.
  9. Serve hot.
