  • Caramel
  • 1 cup sugar
  • 1/4 cup water
  • Flan
  • 2 cups cottage cheese
  • 1 can 14 oz sweetened condensed milk
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Cooking Instructions
 

  1. Preheat oven to 350°F (175°C).
  2. Make the caramel
  3. Add sugar and water to a saucepan over medium heat.
  4. Allow the sugar to melt and turn amber brown without stirring.
  5. Pour immediately into a round flan mold or pie dish and swirl to coat the bottom.
  6. Make the custard
  7. Add cottage cheese, condensed milk, eggs, milk, vanilla, and salt to a blender.
  8. Blend for 1-2 minutes until completely smooth.
  9. Pour the mixture over the caramel.
  10. Bake
  11. Place the flan dish inside a larger baking pan.
  12. Fill the outer pan with hot water halfway up the sides of the flan dish.
  13. Bake for 55-65 minutes until the center jiggles slightly when shaken.
  14. Remove from the water bath and cool completely.
  15. Refrigerate for at least 4 hours, preferably overnight.
  16. Serve
  17. Run a knife around the edge.
  18. Place a serving plate on top and carefully invert the flan.
  19. Allow the caramel sauce to flow over the custard before serving.
