  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 avocado sliced
  • ¼ cup crumbled cheese
  • ¼ cup red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh parsley chopped
  • Lime wedges for serving

Cooking Instructions
 

  1. Heat a grill pan or skillet over medium-high heat.
  2. Toss zucchini and bell pepper with olive oil, salt, and black pepper.
  3. Char vegetables for 5 to 7 minutes until lightly browned.
  4. Lightly char corn in the same pan for 3 minutes.
  5. Arrange charred vegetables on a serving platter.
  6. Top with avocado slices and charred corn.
  7. Sprinkle crumbled cheese, red onion, cilantro, and parsley over the top.
  8. Serve with lime wedges on the side.
