Ingredients
  

  • 10 dried red chilies adjust for heat
  • Hot water for soaking
  • 4 cloves garlic
  • ½ tsp salt
  • ½ tsp sugar optional
  • ¼ cup neutral oil or olive oil
  • 1 tbsp vinegar or lemon juice

Cooking Instructions
 

  1. Place dried chilies in a bowl and cover with hot water. Soak for 10 minutes until softened.
  2. Drain chilies and place in a food processor with garlic, salt, and sugar if using.
  3. Blend until a thick paste forms.
  4. Heat oil in a small pan over low heat.
  5. Add chili paste and cook gently for 3-5 minutes, stirring constantly.
  6. Remove from heat and stir in vinegar or lemon juice.
  7. Cool and store in a clean jar.
