  2. Stir in onion, garlic, herbs, cumin, coriander, cinnamon (if using), salt, and pepper.
  3. Mix in flour until the mixture holds together.
  4. Shape into small patties or fritters.
  5. Heat a thin layer of olive oil in a skillet over medium heat.
  6. Fry fritters for 3-4 minutes per side, until golden and crisp.
  7. Transfer to paper towels to drain briefly.
  8. Serve warm.
