Cooking Instructions
 

  1. Mash roasted butternut squash until smooth.
  2. Stir in ricotta, nutmeg, salt, and pepper.
  3. Lay out ravioli wrappers on a clean surface.
  4. Spoon small amounts of filling onto each wrapper.
  5. Brush edges lightly with water, top with another wrapper, and seal firmly.
  6. Bring a large pot of salted water to a gentle boil.
  7. Cook ravioli for 3-4 minutes, until they float to the surface.
  8. While ravioli cook, heat butter or olive oil in a pan over medium heat.
  9. Add garlic and cook for 30 seconds until fragrant.
  10. Transfer cooked ravioli to the pan and toss gently.
