  • 4 medium potatoes
  • 2 cups mushrooms sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh rosemary chopped

Cooking Instructions
 

  1. Preheat oven to 400°F.
  2. Scrub potatoes and pat dry.
  3. Rub potatoes with 1 tablespoon olive oil and half the salt and pepper.
  4. Place potatoes in a cast iron pan and bake for 40 to 45 minutes until tender.
  5. While potatoes bake, heat remaining olive oil in a pan over medium heat.
  6. Add mushrooms and sauté until golden and tender.
  7. Stir in garlic and thyme and cook for 30 seconds.
  8. Season mushrooms with remaining salt and black pepper.
  9. Remove potatoes from the oven and cut each one lengthwise.
  10. Spoon sautéed mushrooms over the open potatoes.
  11. Sprinkle rosemaryon top before serving.
