  • cups asparagus trimmed and cut into bite-size pieces
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • Zest of 1 lemon
  • ¼ cup lemon juice
  • Salt to taste
  • Black pepper to taste
  • ½ cup grated Parmesan or plant-based alternative

Cooking Instructions
 

  1. Preheat oven to 400°F (205°C). Lightly oil a baking dish.
  2. Toss gnocchi and asparagus with olive oil, garlic, lemon zest, lemon juice, salt, and pepper.
  3. Spread evenly in the baking dish.
  4. Bake for 20 minutes, stirring once halfway.
  5. Sprinkle Parmesan over the top and bake an additional 8-10 minutes, until lightly golden.
  6. Serve warm.
