Ingredients
  

  • 1 medium cauliflower cut to  florets
  • 1 cup cherry tomatoes diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cooking Instructions
 

  1. Bring a pot of water to a boil.
  2. Add chopped cauliflower and blanch for 2 minutes.
  3. Drain and let cool slightly.
  4. Place cauliflower in a large bowl.
  5. Add tomatoes, red onion, cilantro, lime juice, olive oil, salt, and black pepper.
  6. Toss well to combine.
  7. Chill for at least 30 minutes before serving.
