Ingredients
  

  • 1 cup fresh parsley very finely chopped
  • ¼ cup fresh mint finely chopped
  • 2 medium tomatoes finely diced
  • 2 green onions finely sliced
  • ¼ cup fine bulgur wheat
  • 3 tbsp fresh lemon juice plus lemon wedges for serving
  • 3 tbsp extra-virgin olive oil
  • Salt to taste
  • Black pepper or allspice to taste

Cooking Instructions
 

  1. Place bulgur in a small bowl and cover with warm water. Soak for 5 minutes, then drain well and squeeze dry.
  2. In a large bowl, combine parsley, mint, tomatoes, and green onions.
  3. Add drained bulgur and toss gently.
  4. Drizzle with lemon juice and olive oil.
  5. Season with salt and pepper (or allspice).
  6. Toss lightly until well combined.
  7. Serve with lemon wedges on the side.
