Cooking Instructions
 

  1. Cook lentils in salted water for 20-25 minutes until tender. Drain and set aside.
  2. Cook rice according to package directions. Set aside.
  3. Cook pasta until al dente. Drain and set aside.
  4. Heat olive oil in a saucepan. Add onion and cook until soft.
  5. Add garlic and cook for 30 seconds.
  6. Stir in crushed tomatoes, tomato paste, cumin, chili powder, salt, and vinegar.
  7. Simmer sauce for 15-20 minutes, until thickened.
  8. Fry onions in hot oil until golden and crisp. Drain on paper towels.
  9. To serve, layer rice, lentils, and pasta in bowls.
  10. Top with tomato sauce and finish with crispy onions.
