- Cook lentils in salted water for 20-25 minutes until tender. Drain and set aside.
- Cook rice according to package directions. Set aside.
- Cook pasta until al dente. Drain and set aside.
- Heat olive oil in a saucepan. Add onion and cook until soft.
- Add garlic and cook for 30 seconds.
- Stir in crushed tomatoes, tomato paste, cumin, chili powder, salt, and vinegar.
- Simmer sauce for 15-20 minutes, until thickened.
- Fry onions in hot oil until golden and crisp. Drain on paper towels.
- To serve, layer rice, lentils, and pasta in bowls.
- Top with tomato sauce and finish with crispy onions.
