  • 2 lb potatoes peeled and cubed
  • 3 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Chili Garlic Sauce
  • 2 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1–2 tbsp chili garlic sauce or chili paste to taste
  • 1 tbsp soy sauce
  • 1 tsp sugar or maple syrup
  • 2 tbsp water
  • ¼ cup green onions thinly sliced

Cooking Instructions
 

  1. Bring a pot of salted water to a boil. Add potatoes and parboil for 8-10 minutes until just tender. Drain well.
  2. Heat olive oil in a large skillet or roast potatoes in a 425°F (220°C) oven for 20-25 minutes until golden and crisp.
  3. In a pan, heat vegetable oil over medium heat.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in chili garlic sauce, soy sauce, sugar, and water. Simmer for 1-2 minutes.
  6. Add crispy potatoes to the sauce and toss to coat evenly.
  7. Finish with fresh green onions and serve hot.
