  • 2 tbsp olive oil or butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 medium potatoes peeled and diced
  • 4 cups vegetable broth
  • Salt to taste
  • Black pepper to taste
  • ½ tsp dried thyme or oregano
  • ¼ cup fresh parsley chopped
  • Optional: ½ cup milk or cream

Cooking Instructions
 

  1. Heat olive oil or butter in a pot over medium heat.
  2. Add onion and cook for 4-5 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add potatoes, broth, salt, pepper, and dried herbs.
  5. Bring to a gentle boil, then reduce heat and simmer for 25-30 minutes, until potatoes are very tender.
  6. Lightly mash some potatoes in the pot for body, or leave chunky.
  7. Stir in milk or cream if using.
  8. Finish with fresh parsley and serve warm.
