- Heat olive oil or butter in a pot over medium heat.
- Add onion and cook for 4-5 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add potatoes, broth, salt, pepper, and dried herbs.
- Bring to a gentle boil, then reduce heat and simmer for 25-30 minutes, until potatoes are very tender.
- Lightly mash some potatoes in the pot for body, or leave chunky.
- Stir in milk or cream if using.
- Finish with fresh parsley and serve warm.
