  2. Add potatoes and cook for 8-10 minutes, stirring occasionally, until lightly golden and almost tender.
  3. Add onion and cook for 3-4 minutes until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in cumin, coriander, turmeric, chili powder, and salt.
  6. Add chopped methi and mix well.
  7. Cover and cook on low heat for 10-12 minutes, stirring occasionally, until potatoes are tender and methi is wilted and aromatic.
  8. Taste and adjust seasoning. Serve warm.
