- Heat oil in a wide pan over medium heat.
- Add potatoes and cook for 8-10 minutes, stirring occasionally, until lightly golden and almost tender.
- Add onion and cook for 3-4 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in cumin, coriander, turmeric, chili powder, and salt.
- Add chopped methi and mix well.
- Cover and cook on low heat for 10-12 minutes, stirring occasionally, until potatoes are tender and methi is wilted and aromatic.
- Taste and adjust seasoning. Serve warm.
