  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook for 5-6 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add zucchini, and bell pepper. Cook for 5 minutes, stirring occasionally.
  5. Stir in chickpeas, crushed tomatoes, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and pepper.
  6. Bring to a gentle boil, then reduce heat to low.
  7. Cover and simmer for 30-35 minutes, until vegetables are tender and flavors are blended.
  8. Taste and adjust seasoning.
  9. Garnish with cilantro or parsley and serve warm.
