- Heat olive oil in a pot over medium heat.
- Add onion and cook for 5-6 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add zucchini, and bell pepper. Cook for 5 minutes, stirring occasionally.
- Stir in chickpeas, crushed tomatoes, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and pepper.
- Bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 30-35 minutes, until vegetables are tender and flavors are blended.
- Taste and adjust seasoning.
- Garnish with cilantro or parsley and serve warm.
