  • 1 tsp dried thyme
  • ½ tsp paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped (optional)

Cooking Instructions
 

  1. Heat olive oil or butter in a pot over medium heat.
  2. Add onion and cook for 5-6 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add mushrooms and cook for 8-10 minutes, until browned and their moisture has evaporated.
  5. Sprinkle flour over mushrooms and stir well. Cook for 1 minute.
  6. Stir in vegetable broth, tomato paste, thyme, paprika, salt, and pepper.
  7. Bring to a gentle boil, then reduce heat to low.
  8. Simmer uncovered for 20-25 minutes, until thickened and flavorful.
  9. Taste and adjust seasoning. Garnish with parsley if using. Serve warm.
