- Heat olive oil or butter in a pot over medium heat.
- Add onion and cook for 5-6 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add mushrooms and cook for 8-10 minutes, until browned and their moisture has evaporated.
- Sprinkle flour over mushrooms and stir well. Cook for 1 minute.
- Stir in vegetable broth, tomato paste, thyme, paprika, salt, and pepper.
- Bring to a gentle boil, then reduce heat to low.
- Simmer uncovered for 20-25 minutes, until thickened and flavorful.
- Taste and adjust seasoning. Garnish with parsley if using. Serve warm.
