Ingredients
  

  • 2 cups cooked white or brown rice
  • Pinch of salt
  • Chickpea & Spinach Topping
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • cups cooked chickpeas or 1 can, drained and rinsed
  • ½ tsp ground cumin
  • ¼ tsp paprika or turmeric
  • Salt to taste
  • Black pepper to taste
  • 2 cups fresh spinach
  • 2-3 tbsp water or vegetable broth

Cooking Instructions
 

  1. Warm cooked rice gently and keep covered.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and cook for 4-5 minutes until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in chickpeas, cumin, paprika or turmeric, salt, and pepper.
  6. Add water or broth and simmer for 3-4 minutes to warm through.
  7. Add spinach and cook just until wilted.
  8. Spoon chickpea and spinach mixture over or alongside the rice.
  9. Serve warm.
