- Warm cooked rice gently and keep covered.
- Heat olive oil in a skillet over medium heat.
- Add onion and cook for 4-5 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in chickpeas, cumin, paprika or turmeric, salt, and pepper.
- Add water or broth and simmer for 3-4 minutes to warm through.
- Add spinach and cook just until wilted.
- Spoon chickpea and spinach mixture over or alongside the rice.
- Serve warm.
