  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 2 cloves garlic lightly smashed
  • ½ tsp dried oregano or thyme
  • Black pepper to taste
  • Fresh basil or parsley chopped (optional)

Cooking Instructions
 

  1. Preheat oven to 400°F (205°C).
  2. Place feta in the center of a small baking dish.
  3. Scatter cherry tomatoes and garlic around the feta.
  4. Drizzle everything with olive oil.
  5. Sprinkle oregano and black pepper over the top.
  6. Bake uncovered for 22-25 minutes, until tomatoes burst and feta is soft.
  7. Remove from oven and gently stir if serving as a dip.
  8. Garnish with fresh herbs if using. Serve warm.
