  • 2 ripe avocados peeled and pitted

Cooking Instructions
 

  1. Cook pasta according to package instructions until al dente. Reserve ¼ cup pasta water, then drain.
  2. In a bowl or food processor, mash or blend avocados with olive oil, lemon juice, garlic, salt, and pepper until smooth.
  3. Toss warm pasta with avocado sauce, adding reserved pasta water as needed to loosen.
  4. Gently fold in cherry tomatoes.
  5. Taste and adjust seasoning.
